The key is in how to prepare the soy: in a bowl put the Soyalitas with hot water, 1 tea spoon of broth, 1 tea spoon of sea salt. Let it soak for not less than 10 minutes.

Chop and sauté the onion and peppers.
In a bowl, place chopped garlic and parsley along with the carrot, peppers, onion, eggs, Soyalitas, salt and pepper.
